Differences in Japanese Culinary Types: Sushi, Sashimi, Maki and Nigiri

There are so many types of sushi available in Japanese restaurants. Most of these sushi are similar in shape so it is quite difficult to differentiate them.

Sushi

The most important ingredients that must be present in sushi are rice, fish (raw or cooked), and nori and vegetables which are optional, depending on the type of sushi you want to make.

The characteristic of sushi is that the rice is soaked in vinegar. In fact, the word “sushi” comes from a Japanese word meaning “sour rice.” Rice is an important component for sushi.

Sashimi

Sashimi refers to slices of fresh fish or meat served raw, without using any rice at all. Usually, sashimi consists of salmon, tuna, shrimp and octopus.

The word “sashimi”, according to Roka Akor, is translated as “pierced body” or “skewered meat”.

Sashimi is not part of the sushi group. However, you can find sashimi dishes at various sushi restaurants.

Nigiri

Nigiri is a combination of sushi and sashimi. Nigiri is a dish containing sliced raw fish (sashimi) served on vinegared rice (sushi) shaped into an oval shape.

Because nigiri uses vinegared rice, it is classified as a type of sushi.

According to Roka Akor, nigiri means “two fingers”. This is because the nigiri dish is the size of 2 fingers.

Nigiri dishes are always varied, from salmon, tuna, octopus, shrimp, to squid. Some of the nigiri dishes can be served raw, or grilled.

Maki

Maki is a part of sushi. Maki is made from rice filled with fish meat in the middle, then rolled in seaweed.

If you eat traditional rolled sushi, then most likely what you are eating is maki.

Maki has many variants. There is temaki, namely sushi with various fillings and rolled with nori in a cone shape. People call it hand roll sushi.

There is tekkamaki which looks similar to maki but only contains 1 fish plus rice. For example, tuna roll, salmon roll, and cucumber roll.
